Lamb Patties & Feta Salad

Patties
 500 g lamb mince
 2 tbsp lions mane stock concentrate
 1 chopped brown onion
 1 bunch of chopped basil or herb of choice
 1 tsp sea salt
 1 tsp cracked pepper
 1 tbsp olive oil for pan frying
Salad
 1 packet mixed lettuce leaves
 ½ sliced purple onion
 ½ punnet halved cherry tomatoes
 ½ cup sliced dark pitted olives
 1 cup sliced soft fetta
 4 tbs olive oil-based dressing

1. In a bowl combine all the pattie ingredients and with clean hands thoroughly mix. Taking a palm sized amount and shaping into a ball, gently pressing with hands to flatten. Sit on plate ready for frying.

2. In a fry pan on medium heat, add olive oil and then add patties, turning after 4-5 minutes until cooked through.

3. Serve patties with salad above.
