SAUERKRAUT & SAUSAGE SKILLET

 4 Kransky sausages (could also use chorizo)
 1 tbs olive oil
 ½ large onion chopped
 4 tbs sauerkraut
 4 cups spinach
 1 sliced medium broccoli floret
 ½ punnet of halved cherry tomatoes
Salt and pepper to taste

1. Heat a large fry pan, add in oil.

2. Slice sausages thinly, chop onion, add to pan for 4 minutes.

3. Add in broccoli next.

4. Turn over ingredients with a spatula or large spoon for 1-2minutes, then add everything else for 3 minutes approximately.

5. Serve immediately in a bowl, add salt and pepper. Could also top with your favourite mayo.
