Crispy Garlic Herb Chicken Schnitzel Salad

Yields4 Servings
 50 g chicken breasts
 1 large egg
 2 tbsp extra virgin olive oil
 80 g packet Pbco crumbs (original, medium or spicy)
  cup shaved or grated parmesan
 2 tsp mingle herb & garlic spice mix
 1 tbsp butter
 1 tsp salt
 1 tsp pepper
Salad Ingredients
 ½ red Onion
 1 floret broccoli
 1 large sweet potato
 1 packet spinach leaves
 2 tbsp “Good fat” mayo

1. On a plate combine pbco crumbs, parmesan, garlic mix, salt & pepper.

2. Whisk egg and melted butter together in a separate bowl.

3. Slice chicken breasts in half for 4 pieces, coat in liquid mix, followed by dry mix then rest on a plate ready for frying.

4. Heat olive oil in fry pan on medium heat, place marinated chicken pieces into the pan when oil, turning after 4-5 minutes until golden brown on each side. Transfer to a plate to rest.

5. Slice chicken schnitzels up into strips ready for topping on salad.

For the salad this is suggested ingredients above, you could create something different. Lightly steam the chopped broccoli and sweet potato, let cool, combine in a bowl with spinach leaves, sliced red onion and ensemble the chicken pieces on top. Use an olive oil based mayo as condiment on salad for further healthy fats.
