Steamed Cabbage Rolls

Who doesn't love a spring roll? With only 6g of carbs per serve, there's no need to feel guilty about having a few of these as a snack.

 3 cups riced cauliflower (excess water squeezed out in paper towels)
 3 rashers bacon, diced and fried
 1 small onion, diced and fried with the bacon
 ½ cup baby spinach leaves
 5 free range eggs
 1 cup grated tasty cheese
 1 clove crushed garlic (or ½ tsp garlic powder)
 ¼ cup chopped parsley
 Cayenne pepper (optional)
 8 cabbage leaves, blanched or steamed for a few minutes to soften
 Salt and pepper to taste

Combine all filling ingredients together and fry off until cooked in a non-stick pan.

Roll a portion of filling in a cabbage leaf.

Place in steaming basket and steam for about 10-15 minutes till cooked.

Serve with Soy sauce.
