Sauteed Brussel Sprout & Bacon Salad

 2 cups finely sliced brussel sprouts
 4 rashers of diced bacon
 1 tbsp extra virgin olive oil
 1 tsp butter
 1 tsp salt
 1 tsp pepper
 4 cups mixed salad leaves
 1 cup crushed walnuts
 1 grated or thinly sliced zucchini
 100 g soft crumbled fetta
 2 tbsp creamy Mayonnaise for dressing

1. Heat fry pan on medium, add olive oil, bussels, butter, bacon, salt & pepper. Cook 3-5 minutes until browned.

2. Remove and let cool.

3. Prep all other salad items in the bowl and then add brussel and bacon mix.

4. Add dressing, ready to serve
