Minestrone is a classic Italian soup dish that is super nourishing in the winter months. This version is lower carb as it is pasta-free.

 3 rashers of bacon, diced
 2 carrots, diced
 2 sticks of celery, diced
 1 small brown onion, diced
 400 g can of chopped tomatoes
 400 g can of kidney beans, drained
 1 l beef stock or brothBuy Now
 4 garlic cloves, crushed
 Parsley and parmesan cheese to garnish

Add carrots, onion bacon and celery to a large saucepan or soup pot and heat for 5 minutes on high heat until softened.

Add beef stock, tomatoes, garlic, and kidney beans and bring to boil.

Reduce heat, and simmer for 30 minutes.

Serve with chopped parsley and parmesan cheese.
