Add carrots, onion bacon and celery to a large saucepan or soup pot and heat for 5 minutes on high heat until softened.
Add beef stock, tomatoes, garlic, and kidney beans and bring to boil.
Reduce heat, and simmer for 30 minutes.
Serve with chopped parsley and parmesan cheese.
