 4 chicken drumsticks
 1 small sweet potato, diced
 3 tbsp coconut oil Buy Now
 1 ½ tsp curry powder Buy Now
 1 tsp paprika
 1 tsp cayenne pepper
 250 g halloumi
 10 cherry tomatoes
 Basil leaves to garnish

Coat the drumsticks and sweet potato in the coconut oil, curry powder and spices. Rubbing in well to the chicken drumsticks, using your hands to coat.

Add chicken and the sweet potato to a baking dish.

Roughly chop halloumi and add to the dish.

Add whole cherry tomatoes.

Bake in the oven for 30 minutes or until cooked at 180 degrees C and serve.
