Preheat the oven to 180°C and lightly grease or line a 25cm pie dish.
Combine all ingredients for the crust in a large mixing bowl, then scrunch the mixture into a dough with your hands.
Roll the mixture between two pieces of baking paper to line the base of the dish, then fill any gaps with the excess dough.
Prick a couple of holes in the base with a fork, bake in the oven for 15 minutes, then remove and set aside to cool.
While the crust is baking, cook the bacon in a large pan over a medium heat until crispy, then set aside.
Melt the butter in the same pan, then add the onion and cook for 3-5 minutes, or until the onion is tender.
Add the mushrooms to the pan for the last couple of minutes and cook until softened.
Combine all ingredients for the filling in a large mixing bowl, then season to taste.
Spoon the mixture into the dish and bake for 35-40 minutes, or golden and crisp.
Serve hot or cold with a simple salad.
