Low Carb Mince

What a great winter evening meal. Packed with nutrients this mince dish will feed the family supporting a Low Carb lifestyle.

 2 tbsp butter
 1 onion, diced
 2 cloves garlic, minced
 5 piece fresh ginger, finely diced
 1 tsp ground coriander
 1 tsp whole cumin seeds
 1 red capsicum, diced
 2 carrots, diced
 200 g mushrooms, diced
 2 zucchinis, diced
 1 kg beef mince
 500 g pork mince
 800 g crushed tomatoes
 140 g tomato paste
 Salt and freshly cracked black pepper

Heat the butter in a large pan over a medium heat, then add the onion and garlic and cook for 3-5 minutes, or until the onion is tender.

Turn the heat down to low, then add the ginger and spices and cook for 1 minute to release the fragrances.

Remove the onion, garlic, ginger and spices from the pan, then return the heat to medium and cook the capsicum, carrot, zucchini and mushrooms for 3-5 minutes, or until softened.

Remove the vegetables from the pan, then increase the heat to brown the mince. Depending on the size of your pan, you may need to do this in batches.

Once browned, add back the onion, garlic, ginger, spices and vegetables and stir to combine.

Reduce the heat to medium, then add the tomatoes and tomato paste and cook for 7-10 minutes, or until the sauce has thickened.

Season to taste, then serve with zucchini noodles and freshly grated parmesan cheese.
