Preheat oven to 180°C.

Grate pumpkin or add to a food processor and blitz.

Mix all ingredients together in a mixing bowl until combined.

Oil a large muffin tin and pour mixture in.

Sprinkle turmeric and pine nuts on top to garnish.

Bake in the oven for 40-45 minutes until cooked through.
