Pattie Mixture:
 500 g pork mince
 1 egg
 2 tsp cumin
 2 tsp coriander
 1 tsp thyme leaves
 1 tbsp minced garlic
 1 tbsp fresh parsley
 Salt and pepper to taste
Serving Suggestion:
 150 g spinach
 4 eggs
 Chives and chilli for serving (optional)

Mix all the patty ingredients to combine and roll with hands into 4 patties.

Fry in some coconut oil until cooked through flipping as needed.

Remove patties and wilt spinach in the pan. Fry eggs in same pan if room.

Serve patty on the spinach, and top with a fried egg.

Sprinkle with fresh chives and red chilli pieces to serve.
