 1 tbsp butter
 1 onion, diced
 1 clove garlic, minced
 180 g middle rasher bacon, diced
 8 button mushrooms, diced
 100 g baby spinach, roughly chopped
 100 g cherry tomatoes, sliced
 100 g feta, crumbled
 100 g tasty cheese, grated
 8 free range eggs, lightly whisked
 50 ml cream
 Salt and freshly cracked black pepper

Preheat the oven to 180°C and line a baking dish with baking paper.

Heat the butter in a large pan over a medium heat, then add the onion and garlic and cook for 3-5 minutes, or until the onion is tender.

Remove the onion and garlic from the pan, then cook the bacon for 5-7 minutes, or until the bacon is crispy.

Transfer the cooked ingredients to the baking dish, then muddle with the cherry tomatoes, baby spinach and mushrooms, and top with cheese.

Whisk the eggs and cream, season with salt and pepper, and pour over the mixture in the baking dish.

Place in the oven and bake for 30-35 minutes, or until cooked through.

Serve hot or cold with a simple salad.
