ZESTY PORK STIR FRY

 4 Boneless pork chops
 2 finely sliced carrots
 100 g snow peas
 ½ cup chopped spring onion
 ½ cup coriander
 1 cubed eggplant
 100 g cashews
 1 tbsp coconut oil
Stir Fry Sauce
 1 tbsp sesame oil
  cup grated ginger
 2 tbsp lime juice
 2 tbsp sesame seeds
 2 tbsp coconut teriyaki / aminos sauce
 2 tsp salt
 2 tsp pepper

1. Prepare the stir fry sauce in a bowl and add sliced pork to marinade for a couple of minutes.

2. Heat wok or large skillet, add coconut oil, add in pork and sauce, turn after a couple of minutes then add all other ingredients.

3. In 5-7 minutes, all should be ready, serve immediately. Could top with chilli or lime juice for an extra kick.
