Scallops in Butter Sauce

 2 tbsp capers
 2 pieces short cut bacon, diced
 200 g scallops (with roe)
 2 tbsp butter
 1 tbsp fresh Chives
 juice of a ½ a lemon
 Salt and pepper to taste

Fry bacon and capers in pan (no oil needed) until crispy.

Remove bacon and capers from pan and set aside.

Melt butter in the pan, season scallops with salt and pepper, then add to pan on a high heat and cook for 2 minutes.

Put scallops in bowl, add bacon and capers, drizzle with lemon juice and sprinkle with fresh chives.

Serve.
