This peanut butter chicken dish has just the right amount of spice. All cooked in the one pot means less washing up too!

Slice the chicken breasts in halves horizontally and pound with mallet until all pieces are the same thickness.
In a bowl, mix the soy sauce, peanut butter, fish sauce, garlic/chilli sauce, olive oil, and juice of 1 lime.
Place chicken pieces in marinade and mix well.
Heat up a large fry pan and fry the chicken pieces with all the marinade on high heat for a few minutes until crunchy.
Transfer the chicken pieces to a clean chopping board and dice into cubes. Then return to the pan with the spring onion and finish cooking on a medium heat.
Garnish with extra lime juice and some fresh spring onion.
