Pre-heat over to 160°C.
Rub cabbage with butter and sprinkle with salt and pepper.
Sauté bacon and onion in a pan in the coconut oil. Once caramelised add thyme leaves, garlic and paprika, then add white wine and simmer until reduced.
Add chicken broth and apple cider vinegar to a deep baking dish, add the cabbage and top with the onion and bacon mixture.
Cover with foil, and bake for 3.5 hours (removing the foil for the last ½ hour).
