A family favourite! Switch up the traditional baked spud and give it a go with a sweet jacket potato instead. So satisfying!
Preheat oven to 200°C.
Pierce potatoes with a fork and place on a baking tray.
Bake in the oven for an hour.
Just before potato is ready to come out of the oven, fry bacon until crispy.
Remove potatoes from oven.
Slice down the centre and add the butter.
Top the potato with coleslaw mix, grated cheese, bacon.
Garnish with coriander and serve with sour cream.
