Mexican Beans

 1 small red onion
 1 tbsp olive oilBuy Now
 1 red capsicum, diced
 2 cans of black beans, drained and rinsed
 1 can of corn kernels
 2 tbsp crushed garlic
 1 tsp ground cumin seeds
 1 tsp ground chilli flakes Buy Now
 1 tsp dried coriander leaves
 Salt to tasteBuy Now
Garnish
 Cayenne pepper
 Fresh coriander

Slice red onion and add to a frypan with olive oil, cook until softened.

Add the remaining ingredients and stir/simmer for 10 minutes.

Add garnish and serve.
