Lamb Sausage Muffins

 12 eggs
 2 cups chopped basil leaves
 2 tbsp pepper
 2 tbsp salt
 1 punnet of cherry tomatoes
 500 g lamb sausages
 Butter for muffin tray greasing

Preheat oven to 180.

Grease muffin tray with butter.

Crack all eggs and whisk in a large bowl, add basil, salt, pepper, cherry tomatoes.

Heat a frypan and brown the sausages. Remove and chop into chunks.

Divide chopped sausage across each muffin tray and pour in egg mixture.

Bake for 15-20 mins.

Serve with salad or just as is.
