Keto Chicken Fajita Casserole

 2 large chicken breasts or 4 large chicken thighs
 400 ml sour cream
 250 g cream cheese
 1 cup grated tasty cheese
 1 large brown onion
 1 large green capsicum
 1 large red capsicum
 1 cup snow peas
 2 Mingle Taco Spice mixes
 2 tbsp extra virgin olive oil
Serving Suggestion:
Cauliflower Rice
Garnish:
Fresh coriander
Avocado
GOOD Sauce Hot Habanero Sauce

Preheat oven to 180°C.

Slice chicken, onion, snow peas and capsicums and coat in taco spices.

Stir fry chicken mix for 3-5 minutes in olive oil.

Place in baking tray and stir in sour cream and cream cheese.

Cover with grated cheese.

Bake for 20-25 minutes until cheese is golden.

Garnish and serve immediately.
