 150 g broccoli, roughly chopped
 200 g cauliflower, roughly chopped
 150 g halloumi cheese, grated
 60 g tasty cheese, grated
 4 free range eggs, lightly whisked
 3 tbsp psyllium seed husksBuy Now
 3 tbsp coconut flourBuy Now
 2 butter
 Salt and freshly cracked black pepper to taste

Pulse the broccoli and cauliflower in a food processor until finely chopped (or use a cheese grater).

Combine all ingredients in large mixing bowl, then season to taste.

Set aside for 10 minutes to allow the psyllium seed husks to become glutinous and to help bind the mixture together.

Next, heat some butter in a large frying pan over a medium heat.

Using clean hands, mould the mixture into palm sized fritters before adding to the pan.

Cook the fritters for 3-4 minutes on each side, or until golden.

Serve hot or cold with things like: avocado, yogurt, poached eggs, rocket.
