Air Fryer Veggie Chips

 1 sweet potato
 1 parsnip
 1 beetroot
 2 tbsp olive oil
 1 tbsp paprika
 1 tbsp sea salt
 1 tbsp dried thyme leaves
Serving
Sour cream or Good Fat Aioli

1. Pre-heat air fryer to 200C.

2. Cut the veggies into chip size pieces and soak in warm water for at least 15 minutes to leach out some starch. Keep the beetroot separate so the pink colour doesn’t stain the other chips.

3. Coat the chips in the olive oil, herbs, salt, and spices.

4. Cook in the air fryer for 20 minutes until golden and crunchy

5. Serve and eat immediately.
